Nutrition Transitions

To be able to understand how we did evolve from folivorous and frugivorous ancestors we need to focus on what were the most important changes that brought us where we are now. Nutrition transition theory, formulated by Popkin [24], is a description of changing patterns of diet and nutritional health that have accompanied various types of economic transformation, from hunting and gathering, through agriculture, industrialization and urbanization, to the modern and postmodern world.
